This is the first ever release of an oxidative Savagnin by Guillaume d’Angerville at Domaine du Pélican. A classic style in the Jura, the barrels of Savagnin are not topped up, so they become lightly and deliberately oxidised, though the wine is saved from spoilage by the formation of a film of yeast known as ‘flor’ on top of the wine, as also happens with fino sherry.

Pélican’s version is spicy and nutty yet finessed and fresh. This is a complex white with aromas of dried apple, walnut, and caramel. A great match for mushroom and poultry dishes. It also sings when simply paired with a piece of aged Comté.
