Cidre Brut de Normandie Comte Louis de Lauriston is made from many varieties of cider apples (more than 50 varieties are commonly used). Bitter apples form the structure and body of the cider, the sweet varieties bring their aromas while the tart apples give finesse and freshness. 

The ripe apples are crushed before being pressed to extract the juice which ferments until it reaches a little over 4% alcohol. During fermentation, temperature control as well as several rackings allow a slow and aromatic fermentation to be maintained. The cider is then bottled under pressure.
