Made from 100% Chardonnay harvested by a careful and rigorous selection from the lieux-dits of Champs d'Enfer and Bayons et Broccots, their own Priemier Cru vineyards near the village of Villers-Marmery. Vinification takes place in steel vats with 30% of the wine placed in oak barrels, maturing on its lees for around 8 years. No malolactic fermentation takes place.
This champagne shows grapefruit and candied lemon on the nose. The palate is fine and chalky with great structure, ensuring this can age for the long haul if so desired. This wine is only bottled in magnums and sees approximately 475 magnums released each vintage.
