Sin Azufre is Chacra at its most uninhibited: 100% pinot noir from a vineyard planted in 1955, fermented spontaneously in cement with 50% whole cluster, fifteen days on the skins, and aged across used French oak and concrete with no sulfur added at any stage. The old vines give structure and depth, but the wine wears it lightly. Pomegranate and cranberry up front, then violets, orange peel and a fine mineral thread running through a taut, layered mouthfeel. The whole-cluster influence shows in a subtle spice and a real liveliness on the palate.
