Brut S° is the latest from Domaine du Pélican, with the first vintage being 2018. It is entirely made from Savagnin, which prohibits the appellation "Crémant du Jura" whose specifications stipulate that the Pinot Noir/Chardonnay/Trousseau must represent at least 70% of the cuvée (which limits the Savagnin to 30%). The fermentation took place after a year of aging, by assembling the wine aged with 10% of the following vintage at the start of fermentation. The disgorgement took place after 13 months. The ripe fruit gives the wine its vinous character, and the classic qualities of the Savagnin grape bring vivacity, tension, and vibration. The aromatics are bright and clean. The palate is long and delicate.
