This vintage takes its name from the Camargue bull, this noble hero of our ancestral tradition where man is pursued by the beast, and not the other way around. Strong and courageous, he represents our ideal. Here we seek to explore unknown territories, with the hope of finding the most intimate expression of our terroir. We started harvesting the whites the last week of August, noting very small yields but with very good balance, and in particular acidities well above average. This year we are choosing to let malolactic fermentation take place on a few barrels of whites, and I am convinced that 2021 will be a great white year. 

Powerfully complex, disconcerting by the multitude of aromas expressed: white flowers, sweet spices, violet, wax, vanilla.
