Wine harvest is done by careful hand selection when the grapes are mature. Part of the grapes, about 40%, are left to dry on wooden plateaux for 30 - 40 days during October - November. Following vinification, refinement takes place for 14 - 15 months in French barriques followed by a minimum of 6 months in the bottle before release. Intense ruby red with violet reflexes, pronounced and characteristic bouquet of mature red fruits with a slightly spicy note. This is a wine of great structure and elegance, ideal with red meats and cheeses.
