Dolcetto is the great everyday wine of Piedmont. Fine on its own, it also adds lustre to many of the meat dishes from the region, including manzo brasato (red meat in red wine) and bollito misto (mixed-meat stew). This ripe wine is from low-yielding vines that are more than 35 years old and shows plum, spice, herbs, clove and tobacco.
